This is it: The region’s only food incubator of its kind, Kitchen Council. The collaborative Nebraska/Iowa initiative seeks to lower barriers to market entry for food entrepreneurs, offering such amenities as a commercial kitchen space, accelerator programming and workshops – not to mention a groundswell of community support.

The result: “Foodpreneurs” finding success as Kitchen Council members.  Meet Pomodoro Fresh Italian, a food-truck venture bringing the heat in Greater Omaha.

A fresh idea hit Greater Omaha in August 2017, Pomodoro Fresh Italian. The food truck has been successfully making its rounds throughout the metro, gathering loyal followers who line up for their fresh ingredients and delicious pasta. Pomodoro Fresh Italian provides favorites from alfredo to marinara, along with a select bistro menu with American favorites to please every palette.

Co-founded by Julie and Rocky Luna, their children now staff the truck which creates a fun, family-friendly experience.

“We serve what we cook the best,” Julie Luna says. “We have seven kids, that includes a vegan, a vegetarian and one gluten-free.”

With dietary restrictions such as these, the Lunas have taken the challenge in stride, making delicious meals that cater to everyone’s needs and tastes.
